THE FORENSIC PROTOCOLS

SUB-CLASSIFICATION: FIELD BREWING DIRECTIVES

NOTICE TO OPERATOR:

Follow these strict technical specifications to guarantee an optimal flavor yield and preserve compound integrity. Specialty coffee is highly volatile. View the master briefing video above to witness the physical degassing differences between flat, stale shelf crops and our fresh-roasted, hyper-active blooms.

  • 01. THE GOLDEN RATIO

The biggest mistake in brewing is guessing your dosage. Use our 1:16 "Goldilocks Zone" as your safe, baseline starting framework.

    • Baseline Calibration: Use 30 grams of freshly ground coffee to a total fluid yield target of 480 grams of water.

    • The Intensity Overrides: Drop your scale target down to 450 grams (1:15) for a heavy, high-velocity extraction (as executed in our video briefing), or push up to 540 grams (1:18) for a lighter, crisper finish.

    • The Flash-Brew Mandate: If executing a Japanese iced flash-brew, deploy the 40% Ice Code. Load your vessel base with exactly 190 grams of pure ice and extract hot using 290 grams of water.

  • 02. THE WATER CODE

Coffee is 98% water. If you extract using unfiltered city tap water packed with heavy chlorine signatures, you will chemically alter and execute your single-origin flavor profiles.

    • The Purity Matrix: Always brew exclusively with fresh, filtered water.

    • The Standard Thermal Ceiling: For your Light (Misdemeanor) and Medium (Felony) roast grades, keep your extraction heat strictly between 195°F and 205°F to hit perfect solubility.

    • The Dark-Roast Mitigation: If you are deploying an intense Dark Roast like Sumatra or Maximum Sentence, drop your thermal floor down to a cool 188°F. This prevents over-extraction and completely dismisses bitter burn notes. Never use blistering 212°F boiling water on specialty crops.

THE OUTLAW OPERATOR'S MANDATE

Rule Zero: These metrics are calibrations, not cell blocks.

Our advanced matchmaking quiz pairs specific Roast Profiles and Country Origins with designated extraction hardware—but rules are meant to be broken. If you choose to deploy a heavy Dark Roast through your Dotyk Pour-Over cone, simply adjust your gears: coarsen your grind by a few clicks and drop your thermal ceiling down to 188°F to completely dismiss any bitter burn notes.

Experimenting with fresh, roast-to-order microlots is a live game. Adjusting your parameters allows you to hunt down and unlock the absolute best, active flavor profiles your personal palette actually wants out of the bean.

Do not waste your time trying to experiment on dead, store-bought, off the shelf coffee that has been sitting in a grocery aisle for 6 months. The only "experiment" you can run on those flat-lined crops is figuring out how to revive them from the dead just to make them palatable.

Calibrate your own gears. Find your own sweet spot.

  • THE TACTICAL POUR OVER

METHOD: GRAVITY FILTER / MANUAL POUR-OVER

Delivers maximum clarity, bright flavor notes, and a beautifully clean finish. The supreme extraction method for your Light (Misdemeanor) and Medium (Felony) roast grades.

  • THE IMMERSION PRESS

METHOD: FULL IMMERSION SATELLITE (FRENCH PRESS VESS)

Extracts deep, heavy body, rich chocolate notes, and un-filtered coffee oils. The mandatory brewing protocol for your heavy Dark (Capital Offense) purist beans.

    • Target Calibration: 1:12 to 1:15 Ratio (30 grams of coffee to 360–450 grams of fluid).

    • The Thermal Roof: 195°F to 205°F water profile to maximize heavy oil saturation.

    • The Grind Matrix: Set to a heavy coarse consistency—resembling chunky sea salt.

    • Operational Tip: Flood the chamber completely and steep undisturbed for exactly 4 minutes. Plunge slowly and decant immediately to arrest extraction.

  • AUTOMATIC KITCHEN DRIP

    METHOD: AUTOMATED RESERVOIR (CONVENTIONAL DRIPPER)

Optimized for morning speed, massive batch volume, and steady daily convenience. The ideal, reliable extraction pathway for your Medium (Felony) roast tiers and our adaptive Cognitive Division blends.

    • Target Calibration: 1:15 to 1:16 Ratio (Use 2 level tablespoons of coffee for every 6oz of reservoir water).

    • The Thermal Warning: Most standard kitchen machines under-extract because their elements only peak between 170°F and 185°F.

    • The Grind Matrix: Set strictly to a consistent medium texture—resembling table salt or uniform sand.

    • Operational Tip: To combat lower machine heat, maximize saturation by pre-wetting your paper filter with hot water and leveling the coffee bed completely flat before hitting start.
