THE DOSSIER: BREW METHODS
THE EXTRACTION DOSSIER: HOW TO BREW
Buying certified specialty-grade coffee is only the first step of your escape. To experience the true flavor profiles, notes, and clean finishes of our single origins and signature blends, you must execute the extraction with intent. Follow these three master standards for the perfect cup:
1. THE GOLDEN RATIO (DIAL IN THE DOSAGE)
The biggest mistake in brewing is guessing your coffee-to-water ratio. For a perfectly balanced, full-bodied cup, use the 1:16 Golden Ratio as your baseline framework.
* Standard Cup: Use 2 tablespoons (approx. 15–18 grams) of fresh ground coffee for every 6 ounces (approx. 170ml) of filtered water.
* Pro Tip: If you want a heavier body, drop to a 1:15 ratio (more coffee). For a brighter, lighter finish, shift to 1:17.
2. THE WATER CODE (TEMPERATURE & PURITY)
Coffee is 98% water. If you brew with tap water filled with chlorine and heavy minerals, you will kill the natural fruit and chocolate notes of the beans.
* The Purity: Always brew with fresh, filtered water or bottled spring water.
* The Heat: Your water temperature should sit strictly between 195°F and 205°F. If you don't have a thermometer kettle, bring your water to a rolling boil, take it off the flame, and let it rest for exactly 30 seconds before pouring. Boiling water will scorch the grounds; lukewarm water will under-extract, leaving a sour taste.
3. PICK YOUR BREW IMPLEMENT
Match your chosen coffee bag to the correct brewing method for maximum performance:
* The Pour Over (Best for Light/Misdemeanor Roasts): Highlights the bright, clean, complex fruit and floral notes of beans like our Ethiopia Single Origin. Use a medium-fine grind resembling sea salt.
* The French Press (Best for Dark/Capital Offense Roasts): Emphasizes the deep, smoky, heavy-bodied oils and rich chocolate finishes of our Bali Single Origin or The Maximum Sentence. Use a coarse grind resembling rock salt.
* The Drip Machine (Best for Medium/Felony & Signature Blends): Perfect for extracting the balanced, nutty profiles of Brazil or The Daily Lineup. Use a consistent medium grind resembling sand.
